Basic Black bean Recipe
Ingredients:
1 lb Madame Sarah Black Beans (Soak beans in water for 12-24 hours prior to beginning recipe)
4 cups chicken stock or broth (vegetable broth if vegetarian)
2 cups water
3 cloves of garlic, minced
1 whole white onion, minced
1 red bell pepper, diced
1 green bell pepper, diced
1 tsp salt
2 tsp chili powder
2 tsp cumin
1 tsp pepper
½ tsp chipotle powder
Directions:
Drain soaked beans and place in a medium pot.
Add 2 cups of water and 4 cups of chicken (or vegetable) stock/broth, garlic, red pepper, green pepper and onion.
Turn the heat to high and bring the pot to a rolling boil. Once boiling, reduce the heat to low and let cook for 1-½ hours, stirring occasionally.
After 1-½ hours, add in spices, stir in to mix. Cover again and cook for another 1- ½ hours, checking on beans occasionally as cooking time can vary.
Once cooked, blend ½ of the beans and keep the other half full beans.
Add toppings of your choice—our favorites are avocado, cheese or lime!
