Basic Cranberry Bean Recipe
Ingredients:
1 cup of Madame Sarah Cranberry beans (soaked in water overnight)
3 tbsp olive oil
6 garlic cloves, minced
½ tsp of red pepper flakes
1 tsp thyme
2-4 cups of water
3 bay leaves
salt to taste
Directions:
Soak beans overnight in water before cooking. After soaking, rinse and drain beans.
In a deep medium skillet pan, heat olive oil, add garlic, and stir to avoid burning the garlic. Cook until garlic obtains a light golden brown color. Add the red pepper flakes and thyme and cook for another 2-3 minutes.
Add beans and stir to mix all ingredients evenly. Once evenly coated, add 2 cups of water, bay leaves and salt. Bring to a boil.
Once boiling, cover the pot, turn down the heat and simmer for about 30 minutes, or until beans are tender. Note: it may take more or less than 30 minutes. Start to check on the beans at 20 minutes and then in 10 minute increments.
If beans are still not tender after 30 minutes and there is not enough water, continue to add water to the pot as needed. Serve warm over rice.
