Bulgur wheat w/ red beans (ble ak pwa)
Ingredients:
⅔ cup of Madame Sarah Small Red Beans
6 cups water
1 tbsp oil
1 tbsp Madame Sarah Fresh Haitian Epis
2 garlic cloves, diced
1 habanero pepper
¼ cup coconut milk
1 cup of chicken broth
1-½ cups of Madame Sarah Bulgur Wheat
Directions:
In a large pot, add beans and water. Bring to a boil. Boil for 45-90 minutes. Drain beans. Save the water for later use. Return beans to pot.
In the same pot add oil, Haitian Epis, garlic, beans and habanero pepper. Let cook for 5 minutes, stirring occasionally. Add in coconut milk and continue to stir. Add in chicken broth and desired seasonings.
Next, prepare bulgur wheat. Start by rinsing the wheat 3 times or until the water runs clear, add the bulgur wheat to the pot. Let it boil until the water is reduced. Cover and simmer for 1o mintues until cooked. Serve warm and enjoy.
