Mediterranean Pitimi Bowl

Base

Vegetables & Chickpeas

  • 1 cup De Mi Tierra Latina Dried Chickpeas, soaked overnight + cooked until tender
  • 1 zucchini, diced
  • 1 eggplant, cut into quartered rounds (salt for 20 minutes, then pat dry)
  • 1 bell pepper, diced
  • 1/4 cup red onion, sliced
  • 2 Tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp oregano
  • Salt + pepper, to taste

Toppings

  • 2–3 Tbsp parsley, chopped
  • 6–8 olives, sliced

Directions

  1. Cook the pitimi:
    In a pot, bring water to a boil. Add rinsed pitimi and a pinch of salt. Reduce heat and simmer for 20–25 minutes, until tender. Fluff with a fork and set aside.
  2. Roast the veg & chickpeas:
    Toss the cooked chickpeas and diced vegetables with olive oil, smoked paprika, oregano, salt, and pepper. Spread evenly on a baking sheet. Roast at 400°F (200°C) for 25–30 minutes, until vegetables are tender and lightly browned.
  3. Assemble the bowls:
    Divide pitimi between 3 bowls. Top with roasted vegetables and chickpeas. Add sliced olives and chopped parsley.
  4. Add dressing & serve:
    Drizzle with the Tahini Dressing with Fresh Cilantro and enjoy.
