  1. Cook the pasta:
    Bring a large pot of salted water to a boil. Cook pasta according to box directions until al dente. Drain and toss with 1 Tbsp butter to prevent sticking. Set aside.
  2. Prepare the sauce:
    In a medium saucepan, heat 2 Tbsp unsalted butter or oil over medium heat. Add diced onions and bell peppers and sauté for 2 minutes. Stir in 2 Tbsp flour and 1 Tbsp Madame Sarah Mild Fresh Epis.
  3. Add milk and cheese:
    Gradually whisk in the Carnation milk, about ½ cup at a time, until
    smooth. Alternate adding sharp cheddar and mozzarella cheese as the sauce thickens.
  4. Finish the sauce:
    Stir in 1 cup parmesan cheese and 1 Tbsp hot sauce. Reduce heat to medium-low and cook for a few minutes. Add the cooked pasta and season with garlic powder, onion powder, Madame Sarah Dry Haitian Epis Seasoning, and paprika. Stir occasionally for 5 minutes.
  5. Bake the macaroni:
    Preheat oven to 350°F. Transfer macaroni to a baking dish and top with extra cheese. Bake for 20 minutes. Broil for 2 minutes to achieve a golden top.
  6. Serve:
