  1. Peel the plantains and slice them diagonally into six large pieces.
  2. In a medium bowl, mix the water, sea salt, and fresh epis.
  3. Add the plantain slices to the bowl and let them soak for 2 minutes.
  4. Heat a skillet over medium-high heat and add enough oil to cover the bottom of the pan by about ¼ inch.
  5. Fry the plantain slices in batches for 3–4 minutes, turning once, until lightly golden on both sides.
  6. Remove the plantains and place them on paper towels to drain.
  7. Using a plantain presser, flatten each piece one at a time until evenly pressed.
