Ingredients

Green Epis Chicken

Cilantro Lime Rice

Brussels Sprouts

Brown Sugar Bacon

Sweet Chili Maple Sauce

  • 1 Tbsp maple syrup
  • 1 Tbsp sweet chili sauce
  • 1 tsp chili flakes
  • Salt and pepper to taste

Directions

Step 1 – Marinate and Cook the Chicken

  1. Add chicken to a bowl and coat thoroughly with green epis
  2. Cover and marinate for at least 20 minutes.
  3. Heat a sauté pan over medium heat and coat with nonstick spray.
  4. Cook chicken about 8 minutes per side until fully cooked.
  5. Let rest 5 minutes, then slice.

Step 2 – Roast the Brussels Sprouts

  1. Preheat oven to 425°F and line a baking sheet with nonstick spray.
  2. Toss Brussels sprouts with olive oil, onion powder, garlic powder, salt, and pepper.
  3. Roast for 25 minutes, flipping halfway through.

  1. Stir lime juice, chopped cilantro, and salt into warm cooked rice.
